My Favorite Banana Nut Loaf
1 c. all purpose flour
1 c. whole wheat flour
3/4 c. oats
1 t. salt
1 t. vanilla extract
1 t. nutmeg
1 t. cinnamon
1 t. baking soda
1 T. baking powder
1/4 c. brown sugar
1/4 c. white sugar
1/4 cup honey
2 eggs
1/2 c. apple sauce
3/4 c. crushed pineapples
3 mashed banana's
1/2 chopped walnuts
handful of slivered almonds
non-stick spray
Mix all ingredients except for almonds and 2 T. oats. Pour into prepared loaf pan, top with T. oats and slivered almonds.  Bake 350 degrees for 1 hour or until tooth pick comes out clean.






Very Easy Lamb Chili
1 pound ground lamb
1 envelope chili seasoning
2 cans tomato sauce
2 cans red beans
1 can rotel
1/2 can petite cut seasoned tomatoes
1 cup beef broth
1 T Worcestershire sauce
Salt, pepper, creole seasoning to taste

Brown lamb in pot with 1/4 cup beef broth.  After lamb is cooked, add chili packet, Worcestershire, 2 cans tomato sauce, and rotel.  Drain and rinse beans.  Mash one can of beans by hand or in a food processor.  Add the whole beans to pot.  Add 1/4 cup beef broth to mashed beans and mix well then add to pot.  Add remaining broth to pot and stir.  Heat then add salt, pepper and creole seasoning to taste. Serve over brown rice, corn chips or alone.  Top with grated cheese and a dollop of sour cream
